Cappuccino Choc Muffins

Coffee and chololate; a perfect morning combination

1 1/2 cup Flour
1 serve Cappuccino mix, any flavor
1/2 cup Sugar (Consider reducing this to 1/4 cup, just to lower the guilt factor a bit and make these more suited to mornings)
1 1/2 teaspoon Baking powder
1/2 teaspoon Ground cinnamon
1/4 teaspoon Salt
2 Eggs, slightly beaten
1/2 cup Chilled coffee or milk
1/2 cup Sour cream
1/4 cup Butter or margarine, melted
1/2 cup Semi sweet chocolate chips
Heat oven to 375 degrees F.

Mix flour, cappuccino, sugar, baking powder, cinnamon and salt in a large bowl; set aside. Stir eggs, coffee, sour cream and melted butter in a small bowl until well blended. Add to flour mixture; stir just until moistened. Stir in chocolate chips. Spoon batter into greased or paper lined muffin pans, filling each cup 2/3 full.

Bake 30 minutes or until toothpick inserted in center comes out clean.
